Hide Text in Word 2007

First, why would you want to hide text in Word? One scenario that comes to mind is you have sections of text in a long document that you don't want to permanently delete. For whatever reason, you want to keep these sections, but you don't want the document recipient(s) to see the text. Create Forms Where Only Fields are Editable

Personally, I prefer to use Excel to create forms. It's much easier to align fields and make the ends of horizontal lines "match up". It's also easy to prevent users from editing anything other than the fields you want them to complete.
